Chicken Apple

This meal can easily be made the night before, for a quick lunch to bring along to work.

Recipe makes 2 servings.

2 chicken breast(s), boneless skinless (4-6 oz)
1/4 teaspoon(s) sea salt, (optional)
1/8 teaspoon(s) black pepper, freshly ground
2 tablespoon(s) coconut oil
1 large apple(s)
1/2 teaspoon(s) cinnamon, or allspice


  1. Dice chicken breasts. Season with sea salt and freshly ground black pepper. Set aside.
  2. Heat a medium saute pan over medium-high heat. Add coconut oil when hot.
  3. Add diced chicken and cook until slightly pink (about 150 F).
  4. Grate apple into pan.
  5. Add cinnamon or allspice.
  6. Continue to cook until chicken is done and apple is tender.

    I detest this particular recipe. The flavors do NOT marry well and I find myself gagging after about 5 bites. JMHO.

    This is awesome. We absolutely love this recipe. You have to cook the apples long enough. I bake the chicken (with olive oil and cover)and then shred it and eat it hot.

    I haven’t tried this yet, but love chicken and apples together (I’ve always included apples in my chicken salad). What I like about this is that it looks so easy. I love simple recipes — please keep them coming.

    I just tried this recipe and thought it was a wonderful change in flavor. I used my pre-cooked already spiced up baked lean chicken breast and a macintosh apple with cinnamon. Easy, Easy, Easy!

    I made this last night. After reading the comments, I decided to add onions, celery, and a last minute decision of sliced almonds. I thought it was delicious. Loved the apple and cinnamon. The celery gave it texture and a pop of color. I thought it could even be served over a bed of spinach for a hearty salad.

    Loved it…made it and then created a spinach salad covered with the chicken, slices of crispy bacon and a few candied Trader Joes pecans……I also included a few quartered apple pieces in the sauté in addition to the grated apple pulp…..loved it…next time will try a little Paleo friendly dressing to give it a little creaminess….

    I also sautéed some chopped sweet potatoes and mixed it up with this. Tasted great! I used more cinnamon than the recipe calls for, though.

    I loved it. I took the advice of some of the other comments and added celery, onion, and carrots. My husband and son were not fans of it, but I will make it again and add sweet potatos (another thing neither of them like-but this time the meal is just for me)!

    Is better if you chop pork in to cubes, then apple. Way better flavor pairing.

    This was delicious. After reading the reviews, I also decided to add onions and celery. Instead of shredding the chicken, I diced it. I put everything in the pan at the same time. About a minute before I pulled it off the stove, I also added raisons.
