Chicken Apple

Makes lunch for two. This meal can easily be made the night before, for a quick lunch to bring along to work.

Approximate cooking time: 20 minutes

Ingredients

  • 2 (4-6oz) boneless, skinless chicken breasts (or use leftover chicken from another meal)
  • 1/4 tsp sea salt (optional)
  • 1/8 tsp freshly ground black pepper
  • 2 Tbs coconut oil
  • 1 large apple
  • 1/2 tsp cinnamon or allspice

Instructions

  1. Dice chicken breasts. Season with sea salt and freshly ground black pepper. Set aside.
  2. Heat a medium saute pan over medium-high heat. Add coconut oil when hot.
  3. Cook diced chicken until just before fully done (about 150° F).
  4. Grate apple into pan.
  5. Add cinnamon or allspice.
  6. Continue to cook until chicken is done and apple is tender.

  1. I detest this particular recipe. The flavors do NOT marry well and I find myself gagging after about 5 bites. JMHO.

  2. This is awesome. We absolutely love this recipe. You have to cook the apples long enough. I bake the chicken (with olive oil and cover)and then shred it and eat it hot.

  4. I haven’t tried this yet, but love chicken and apples together (I’ve always included apples in my chicken salad). What I like about this is that it looks so easy. I love simple recipes — please keep them coming.

  5. I just tried this recipe and thought it was a wonderful change in flavor. I used my pre-cooked already spiced up baked lean chicken breast and a macintosh apple with cinnamon. Easy, Easy, Easy!

  8. Sweet chicken tastes weird. Nonetheless, great dish for quick post workout meal
