Makes dinner for two, with leftovers for lunch.
Approximate cooking time: 45 minutes
Ingredients
- 1 lb beef flank steak
- 1 Tbs olive oil
- 1 tsp chipotle powder
- 4 slices fresh pineapple (canned in juice may be used)
- 1 large red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- juice of 1 lime
Instructions
- Prepare the grill, or turn the broiler on high.
- Mix oil and chipotle powder together in a small dish.
- Brush onto both sides of the steak.
- Grill for around 5 minutes on one side, and 3 more minutes on the other. Or, broil 3 minutes on one side, and 2 minutes on the other.
- Remove to a plate, cover and let rest for 10 minutes.
- Grill the pineapple rings for 2-3 minutes per side (or broil for 45 seconds to 1 minute per side).
- Cut the pineapple into small chunks and place in a medium bowl.
- Add red bell pepper, red onion, cilantro and lime juice and mix together.
- Slice the steak thinly, and serve with pineapple salsa.

This was fabulous and a big hit at my dinner party. I made extra salsa because it keeps for several weeks in the refrigerator. This way I only needed to make the meat. It is great with pork, chicken and fish.

Absolutely to die for! I LOVED it! The pineapple salsa is just awesome. Tasted pretty good on some left over fish too but definently a match for a meatier meat.

This was very good, even though we forgot to get cilantro at the store… I added some tarragon and extra lime to the salsa. Yum!
