Grilled Flank Steak with Pineapple Salsa

1 pound(s) beef - flank steak(s)
1 tablespoon(s) olive oil
1 teaspoon(s) chipotle, ground
1 can pineapple slices
1 large bell pepper(s), red, diced
1/2 medium onion(s), red, diced
1/4 cup(s) cilantro, fresh, chopped
1 medium lime(s), juiced


  1. Prepare the grill, or turn the broiler on high.
  2. Mix oil and chipotle powder together in a small dish.
  3. Brush onto both sides of the steak.
  4. Grill for around 5 minutes on one side, and 3 more minutes on the other. Or, broil 3 minutes on one side, and 2 minutes on the other.
  5. Remove to a plate, cover and let rest for 10 minutes.
  6. Grill the pineapple rings for 2-3 minutes per side (or broil for 45 seconds to 1 minute per side).
  7. Cut the pineapple into small chunks and place in a medium bowl.
  8. Add red bell pepper, red onion, cilantro and lime juice and mix together.
  9. Slice the steak thinly, and serve with pineapple salsa.

    This was fabulous and a big hit at my dinner party. I made extra salsa because it keeps for several weeks in the refrigerator. This way I only needed to make the meat. It is great with pork, chicken and fish.

    Absolutely to die for! I LOVED it! The pineapple salsa is just awesome. Tasted pretty good on some left over fish too but definently a match for a meatier meat.

    This was very good, even though we forgot to get cilantro at the store… I added some tarragon and extra lime to the salsa. Yum!

    The first time we made this on the grill and it was PERFECT! Definitely a favorite. The second time it was raining so we used the broiler according to the directed times, and it came out very raw, like practically mooing. If I need to broil again, I’ll cook MUCH longer.
