Turkey Carrot Quiche

Ingredients

  • 1/2 lb ground turkey
  • 1 Tbsp olive oil
  • 1 cup shredded carrots
  • 6 eggs (Omega-3 eggs preferred)
  • 5 Tbsp coconut milk
  • 1/2 cup beef broth
  • 4 Tbsp fresh parsley
  • 1/2 tsp coriander
  • coconut oil

Instructions

  1. Cook the turkey in a bit of olive oil in a skillet over medium heat.
  2. Shred the carrots.
  3. Break the eggs into a bowl; beat well with a whisk.
  4. Add the meat when done, carrots, and all of the remaining ingredients except the coconut oil. Stir.
  5. Cover a baking dish or pie pan with some coconut oil. Pour in the mixture, then bake at 350 degrees for 25-30 minutes.
  6. Serves 4

  1. What is 6 omega 3 eggs? Is it 3 or 6 eggs?

  2. 6 omega 3 eggs refers 6 eggs of a type of eggs that were raised with higher amount certain elements in the chickens’ diet to boost omega 3 content in the eggs. Confusing way to write it, though.

  4. I’ve cooked this twice now and both times it ends up slightly goopy. Probably just my oven. I fix it by cooking it for 30 minutes at 300 and then another 10 at 350. Could probably go for 20-25 minutes at 350 for the same effect; I’m going to try that next time.

  5. I don’t think it is your oven. After 30 minutes at 250 it was still soup, and my oven is 2 years old and not used much :) . I changed the temp to 350 and still cooked it for about 15-20 min longer. Next time I will do 350 for at least 30 and then go from there.

  7. The Turkey Carrot quiche was very delicious. But Kylaho was right after 30 mins under 250 temp it was still soft. so I changed the temp to 350 and cooked it a little longer and it came out just right.

  8. Most egg dishes are cooked at 350 or higher, often for 40 min. or so, which I did.

    I added fresh sage to this — added a nice flavor! And, it needed salt!

    Otherwise — yummy!

  9. I concur with others observations, cooking at 250 didn’t work, upped it to 350 and that did the trick. Also a little ‘bland’ so added some salt to taste. None the less, a tasty dinner / breakfast.

  10. I try not to heat olive oil and instead use coconut oil to brown any meat and it adds sooo much flavor. Also cooking eggs in coconut oil is the BEST way to eat them!

  11. Tried this dish this morning after my workout and it was awesome! Filling and tasty! I will admit that the baking part was a bit frustrating because it seemed to never completely cook (stayed goopy in the middle forever! Even with the temperature/time change on the oven). Preparation was easy and I will definitely make this again soon :) .

  12. This was pretty bland. I would add salt/pepper and/or other seasonings the next time. Also, unless you like crunchy raw shredded carrot in your quiche (I don’t), I would do a quick microwave steam on the carrots before adding them in. Otherwise, this is a great recipe that just needs a little help. Also, definitely cook it for 30-35 minutes at 350 degrees and then let it sit for about 5 minutes or so– it firms up after cooking once removed from the oven.
