Ingredients
- 1 Tbs coconut oil
- 1/2 yellow onion, diced
- 2 medium tomatoes, diced
- 4 handfuls of spinach
- 1 package (several sprigs) fresh basil
Instructions
- Wash and prepare vegetables.
- Heat a small skillet over medium-high heat. Add coconut oil when hot.
- Add diced onions, and sauté until soft and translucent. Add tomatoes and cook for another minute or two.
- Add spinach and basil to the pan and cook for one minute.
- Serve warm.

Doesn’t say when to add the basil… Just a garnish?

It actually says at the very top of the recipe description –
“Add the basil at different times for different flavors and preference. It will be more strong added dead last and uncooked, but will not be incorporated into the dish as well.”

it should still give that as well in the instructions….I wouldn’t look at the top of the recipe to see what the instruction for cooking it was if there is a column that says “Instructions” on the page.

There is so much you can do with this. Why stop at nuts and eggs. How about your meats, other veggies, go crazy. After I make a dish, (have not made this one yet)I then know how else I can change it up. My husband went to culinary school so he really helps me with making the dishes, even though he knows how to really cook, this new way of cooking is different for both of us.

Not a fan of mushy or hot spinach, still made it anyways just to say I tried it. Two bites and I was over it. I will try it cold to see if I can swing it that way.
