Makes dinner for two, with leftovers for lunch.
Approximate cooking time: 60 minutes
Ingredients
- 3/4 lb parsnips, peeled and grated
- 1 Tbs olive oil
- 1 tsp onion salt
- 1 bacon slice
- 1/2 lb zucchini, sliced
- 1/4 lb white button, cremini or shitaake mushrooms, sliced
- 1 stalk celery, diced
- 1 tsp coconut oil
- 1/2 red onion, finely diced
- 1-1/4 lb ground turkey
- 2 green onions, sliced
- 1 Tbs Italian seasoning
- 1 tsp celery salt
- 1/2 tsp freshly ground black pepper
- 8 egg whites, divided
- 1/2 cup fresh parsley, chopped
Instructions
- Preheat oven to 450° F.
- Peel parsnips and grate with a cheese grater. Mix with onion salt and olive oil, and set aside.
- Cook bacon slice in a large saute pan over medium heat. Save bacon fat and leave it in the pan. Cool bacon slice, crumble, and set aside.
- Add zucchini, mushrooms, and celery to the pan with the bacon fat and saute until slightly softened.
- Heat a separate pan over medium-high heat, and add coconut oil when hot. Add onions, ground turkey, Italian seasoning, celery salt and black pepper to taste. Saute until turkey is fully cooked.
- Combine meat and vegetables in one pan and mix thoroughly. Let cool 5 minutes.
- Combine 4 egg whites with parsley and stir into the meat and vegetable mixture.
- Combine the other 4 egg whites with parsnips.
- Coat an 8x8 baking dish with olive oil.
- Add meat and vegetable mixture, cover with parsnip mixture and top with crumbled bacon.
- Bake for about 25 minutes or until the top begins to brown.

I really liked the recipe as it was – delicious!! Next time, however, I think I would make the following changes to make it more like the real thing: omit the cilantro, add some chopped garlic and carrots to cook with the celery and onion, top with mashed parsnips and bake.

This was really good. Next time I’m going to use Cauliflower in place of the Parsnips. Carrots would be good in this too! Then it will be perfect!

this recipe is amazing i cooked the meat in ghee and put lots of garlic and onion powder, and oregeno and thyme and garlic in the mash and used cauliflower instead of parsnips thanks for the great recipe idea

Had to go with what was in the fridge and luckily I had everything but the parsnips. Replaced parsnips with sweet potato and grated it with carrots in the food processor. Replaced the turkey with grass-fed beef which increases the calorie content but the rest I kept the same and it was so delicious!

A friend of mine lost 60 pound in less than a year on this diet. I am 61 years old and don’t want a crazy diet. I tried Weight Watchers and it just did not help. So…I am asking for your help. How do you make the cauliflower instead of the parsnips? Do you grate cauliflower with a cheese grater too?

I was a bit nervous to try this recipe on my family, having made an amazing shepherds pie for years. But now looking for cleaner eating found this option to try. Everyone ate it! I did add a bit of lamb because I had to increase the recipe for my family and I didn’t have enough ground turkey in the house. So next time I think they will like it better without lamb. I liked it but they don’t prefer it. Also, had never even bought parsnips before, didn’t even know what they looked like! They made a great substitute for the mashed potatoes. I wasn’t sure I would like it but I did! Lots of flavor in the dish.

This was really good, but did not satisfy my Shepard’s Pie craving. I think it came out more like a breakfast bake because of the egg whites. It smelled amazing and tasted really good, it just sucks when you have Shepards Pie on the brain and it’s not quite right! I think I will try again with a few changes. I will most likely omit the eggs, since I never put it in my real Shepards Pie anyway. I was thining I would either mash the parsnips next time or sub cauliflower mashers. This is good, just don’t expect it to taste like actual Shepard’s Pie!!!
