Chipotle Lime Salmon

1 pound(s) salmon fillet(s), skinless
2 tablespoon(s) olive oil
2 medium lime(s), (1 per serving), cut in half
1/4 teaspoon(s) sea salt, (optional)
1/2 teaspoon(s) chipotle, ground


  1. Preheat oven to 350 F.
  2. Rinse salmon, pat dry, and place on a metal baking sheet.
  3. Rub each fillet with olive oil or fat of choice, and squeeze the juice from one-half lime onto each fillet.
  4. Sprinkle fillets with sea salt (if desired) and chipotle, then place a half lime on top of each fillet.
  5. Cook salmon for 12-15 minutes, or until it flakes easily with a fork.

    My husband and I aren’t a huge fan of fish, but we’re trying to eat more of it. So, I’m adding some of the milder fish like Cod and Halibut. Tonight we tried this recipe with some Cod – was really good! The only thing I think I would change would be to add a little grass fed butter to it, I think the cod needed a little ‘boost’ in that direction.

    Tried this with trout last night and it was pretty tasty. Fried it in olive oil as I didn’t have time to bake it in the oven. I added the chipotle spice just before dipping the fish into the pan, and then after flipping it added a tad more.

    Just started the Paleo diet yesterday and this was my first dinner! It was fabulous, fallowed the recipe completely and both me and my great aunt were very pleased! Will definitely make this again :)
