Paleo Cookies

Ingredients

  • 2 cups raw honey
  • 2 cups walnuts, ground
  • 4 cups almond flour
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup dried fruit, chopped
  • coconut oil (or parchment paper)

Instructions

  1. Preheat oven to 350℉.
  2. Lightly grease a baking sheet with coconut oil, or line with parchment paper.
  3. In a small saucepan, warm honey over medium heat, set aside.
  4. Sift flour and spices together.
  5. Place warm honey in a large mixing bowl, and gradually add flour mixture.  Stir until well blended.
  6. Stir in dried, chopped fruit.
  7. Roll dough about 1/4-inch thick on a floured board and cut into small squares.
  8. Transfer to baking sheet and bake 10 minutes.

  1. These were great I added some coconut too but I made them into drop cookies. I would definitely add some salt or lemon zest to balance the super sweet honey. Delicious!!

  2. awful. Too sweet. Had to cook it for longer yet it burned around the edges. Halved the recipes, added cinnamon. The honey would’ve been better if you did 4 cups of flour with 1 cup of honey. Will not make again.

  3. I used my imagination and did modifications to the original recipe:
    I used cinnamon and nutmeg instead of ginger, added vanilla bean extract and some pure cocoa powder( sugar free, 100% natural) as well as raisins, chopped cranberries and hazelnuts.
    Try them!! they are simply awesome!!
