Myra’s Chopped Mushrooms, Eggs and Onion

Makes enough for 2 people for 2 breakfasts – 4 servings.

Ingredients

  • 8 slices of bacon (save drippings)
  • 8 hard-boiled eggs, peeled and finely chopped
  • 1 medium onion, finely diced
  • 10-12 medium white mushrooms, finely chopped
  • freshly ground black pepper, to taste

Instructions

  1. Cook bacon fully and remove from pan. Reserve a light coating of bacon fat in the pan. Crumble bacon pieces when cool and set aside.
  2. Meanwhile, hard-boil the eggs.
  3. Cool cooked eggs in water and shell immediately.  Chop into bite-size pieces.
  4. Over medium-high heat, sauté the onion in the remaining bacon drippings until translucent and golden brown.
  5. Add the mushrooms and sauté another 5-6 minutes, stirring frequently, until softened.
  6. Mix saute, eggs, and bacon together, and season with black pepper.
  7. Serve warm or cold.

  1. This is very similar to my usual breakfast which consists of sauteed onions and mushrooms in olive oil (I don’t chop them very small) and then I set them on a plate with two over easy eggs on top. I love the way the mushrooms and onions soak up the yolk!!! YUMMMIES!

  3. vegetable oil is definitely not paleo, use coconut oil.

  5. This was yummy, however I’m also confused about the bacon. Crumble and add or serve on the side?

  6. I recommend adding part of this recipe as a “prep” item perhaps the day before – I found it too time consuming to make in the morning from start to finish. Is this served cold? I note the directions say “chill until ready to serve.”

  7. Definitely a Prep item.
    I made this yesterday evening along with Monday’s lunch of Paleo nicoise salad.
    Took a little over an hour for both meals and I also busted out my nuwave oven to dehydrate some beef overnight for Monday’s snack. (I marinated the beef in apple cider for about 5 hours beforehand.)

    This is my first week of using this site and I wanted to make sure I gave plenty of time to prep food for the next day. Food came out great and I had the breakfast served cold.

  9. This meal serves two people? Seems like alot of food? 4 pieces of bacon and 4 eggs a piece? Am I reading this right?

  10. @lisaannhb29 – The language at the top of the recipe wasn’t totally clear, so I changed it. The recipe makes 4 servings – 2 breakfasts for 2 people because we often use this one on our meal plans with leftovers for the next day. Sorry for the confusion!

  12. Very yummy recipe. We’re not crazy about boiled eggs in our house so I just stirred the eggs into the bacon, mushrooms, and onions. It was great!
