Makes 4 servings.
Approximate cooking time: 15 minutes
Ingredients
- 1/2 small red or green cabbage, chopped
- 1 tart apple (Granny Smith recommended), grated or chopped
- 1 large stalk celery, chopped
- 1 medium bell pepper (any color), chopped
- 1/4 cup olive oil
- juice of 1 lemon
- 2 Tbs raw honey
- 1 tsp celery seed
- dash sea salt
Instructions
- Toss the cabbage, apple, celery, and bell pepper together in a large bowl.
- In a smaller bowl, whisk remaining ingredients.
- Drizzle over coleslaw and toss to coat.

I have to say that this was a whole lot better than I imagined! I was a bad girl and added a tiny bit of stevia and doubled the honey. We are sweet addicts, and I figured I better submerge the family into this slowly. I found myself going to snack on it instead of all the snacks in the pantry.
I also did part red cabbage and part green. Not sure if that affected the flavor, but the flavor was great either way.+

This was delicious as is, but for me was missing the “bite” that traditional slaw has, so I added a couple splashes of apple cider vinegar and some fresh cracked black pepper. YUM!

The bell pepper in this was a little weird, but overall it was very good. Oh, and we used about a third less honey than called for.

This is good. However, I grabbed some leftovers for lunch and threw a brat and some of this slaw in the same container. After zapping it in the microwave, this becomes the absolute BEST sauerkraut I have ever tasted. I know it is not real sauerkraut, but it is mighty testy.

This recipe was well-received in my house (hard with a very very very picky husband).
Since I didn’t plan to use honey (on a Whole30), I used a gala apple instead of a tart one. That added enough sweetness, along with the yellow bell pepper, that we didn’t miss the honey. Also didn’t use celery seed; not sure what we missed without it.
