Spinach Salad


Makes a side salad for two.

Approximate prep time: 15 minutes


  • 1 bunch fresh spinach
  • 4 green onions, chopped
  • juice of 1 lemon
  • 2 Tbs olive oil
  • freshly ground black pepper


  • Wash spinach well, drain and chop.
  • Let leaves sit for a few minutes and then squeeze out excess water.
  • Put spinach in a medium bowl and add green onions, lemon juice, oil and pepper.
  • Toss and serve.

  1. Made this as a side to the Sausage Stuffed Tomatoes. OH MY GOODNESS!!! Everything was soooo delicious! By far my favorite dishes. Day 2…DONE! haha
