Makes a side salad for two.
Approximate cooking time: 15 minutes
- 1 bunch fresh spinach
- 4 green onions, chopped
- juice of 1 lemon
- 2 Tbs olive oil
- freshly ground black pepper
- Wash spinach well, drain and chop.
- Let leaves sit for a few minutes and then squeeze out excess water.
- Put spinach in a medium bowl and add green onions, lemon juice, oil and pepper.
- Toss and serve.
