Makes two salads.
Approximate cooking time: 20-35 minutes
Ingredients
- 4 eggs, hard-boiled, halved
- 1 head of red leaf lettuce
- 1/2 lb ham or grilled chicken, diced
- 2 slices bacon, cooked and crumbled
- 8 cherry tomatoes, halved
- 4 green onions, sliced thin
- 2 stalks celery, diced
- 1 avocado, diced
- 4 tsp Simple Salad Dressing
Instructions
- Hard-boil eggs, cool and remove shells.
- Meanwhile, cook bacon and crumble, grill chicken and dice (or dice ham).
- Wash and chop vegetables.
- Divide lettuce between two plates, top with vegetables, eggs, avocado and meats.
- Top with Simple Salad Dressing.

Sunday Dinner says to ‘cook chicken and prep ingredients for tomorrow’s salad’… what chicken, cook it how? and does it go in the chef salad for Monday Lunch? That recipe only lists ham. Thanks.

Loving the idea of a Chef Salad. Does it matter what kind of lettuce? I’m not a big fan of iceberg lettuce but love the Waimanalo Greens I am able to buy here on Oahu.

Can someone tell me what Paleo fiendly dressing would be? I prefer to have olive oil and balsamic vinegar on my salad. Does that work?

I would assume that this recipe is supposed to say 4 Tbsp of dressing instead of tsp, since the dressing states that 1 serving is 2 Tbsp. Other than that looks yum, can’t wait to make it!

arlynn13 – It’s actually supposed to say tsp, but you can certainly change it to 2 tbsp if you’d like.
