Sunday Dinner says to ‘cook chicken and prep ingredients for tomorrow’s salad’… what chicken, cook it how? and does it go in the chef salad for Monday Lunch? That recipe only lists ham. Thanks.

Loving the idea of a Chef Salad. Does it matter what kind of lettuce? I’m not a big fan of iceberg lettuce but love the Waimanalo Greens I am able to buy here on Oahu.

In general, we don’t prescribe lettuce types, use whatever works for you.

Can someone tell me what Paleo fiendly dressing would be? I prefer to have olive oil and balsamic vinegar on my salad. Does that work?

Yes, that works. Here and here are two blog posts and one recipe to answer your question.
