Ingredients
- 6 medium tomatoes
- 1/2 small cucumber
- 2 sticks celery
- 2 spring onions
- 1/2 C. fresh parsley
- 1 T. fresh mint
- 1 clove garlic
- 2 t. kelp
- 1/2 C. sunflower seeds
- 1 T. lemon juice
- 1 T. olive oil (optional)
Instructions
- Cut tomatoes in half and scoop out center.
- Save tomato pulp for filling.
- Finely chop all other ingredients.
- Put all ingredients into a large bowl and add tomato pulp; mix well.
- Fill tomato halves with filling.
Makes 12 servings.
