Tomato Cups

Ingredients

  • 6 medium tomatoes
  • 1/2 small cucumber
  • 2 sticks celery
  • 2 spring onions
  • 1/2 C. fresh parsley
  • 1 T. fresh mint
  • 1 clove garlic
  • 2 t. kelp
  • 1/2 C. sunflower seeds
  • 1 T. lemon juice
  • 1 T. olive oil (optional)

Instructions

  1. Cut tomatoes in half and scoop out center.
  2. Save tomato pulp for filling.
  3. Finely chop all other ingredients.
  4. Put all ingredients into a large bowl and add tomato pulp; mix well.
  5. Fill tomato halves with filling.

Makes 12 servings.
