Nitrites have long been thought to contain harmful, carcinogenic properties. And bacon has long been considered a culprit in containing nitrites. Plenty of bacon is labeled as “nitrite- and nitrate-free,” but is it possible to find bacon that really is free of these additives? Not really.
Cooks Illustrated tested several types of bacon, where they concluded: “All bacon is likely to contain nitrites and nitrates, whether added at the outset or formed naturally during processing. If you want to avoid these compounds, you’ll have to avoid bacon.”
Your reasons for eating Paleo may vary, and the levels of commitment to the purity of the Paleo diet may also vary. Please consider these things when you see bacon in our recipes.

I was wondering how I should set up each of my meals?? what percentage of protein, fat, and carbs are needed for weight loss, snacks included..

@Jenna, that really depends greatly on your body composition and specific goals and exercise. Many people follow Zone principles and divide into 40% carbs, 30% protein, 30% fat. If you’re trying to lose weight, be careful where you get those carbs, keep fruit amounts low, and eat tons of non-starchy vegetables for your 40%.
