Makes about 1-1/2 cups. Double or triple the recipe and freeze leftovers for future meals. Excellent on grilled meats or spaghetti squash.
Approximate cooking time: 15 minutes
Ingredients
- 2 oz fresh basil leaves (about 1 cup packed full)
- 1/4 cup raw pumpkin seeds
- 1/4 cup raw cashews
- 2 Tbs lemon juice
- 1/2 tsp coconut aminos
- 2 cloves garlic
- 1/2 tsp sea salt (optional)
- dash cayenne pepper
- 1/2 cup olive oil
Instructions
- Put all ingredients into a food processor and blend into a smooth paste (stop several times and scrape the sides of the bowl down to get an even texture).
- Add more or less olive oil to reach desired consistency.

I made this to eat with my salmon last night, but was confused by this recipe. Usually you mix all of the ingredients together with a food processor, but I don’t see that used anywhere in the recipe. How do you mix everything together for this particular recipe?

You’d mix all of the ingredients in a food processor with a raw pesto sauce, but the heating of the ingredients helps mix them all together. You could certainly just mix them in the food processor instead of sauteing them, though, or both I suppose.

To be fair, I’ve never made pesto before and had no idea what I was doing, ha. I cook often and can usually follow a recipe. Maybe some more clarification on the process?

Made this in food processor and put on the almond-flax pizza crust recipe. Toppings of sausage, tomato, mushrooms and onions. Yummy! Even my 3 year old loved it.

mollythemobster – You can, but it’s not Paleo. It’s certainly not the worst thing you can eat, especially if you don’t have a soy sensitivity, but it is soy.

Why are you guys heating the pesto? all the ingredients should be just blended together…. Never heard of cooked pesto… I’d imagine its quite bitter……..
