This dressing is great on a salad of greens, chicken, strawberries and almonds.
Ingredients
1/2 c. sliced strawberries
1 tsp. mustard
2 Tbsp red wine or balsamic vinegar (check carb counts)
salt and pepper to taste
sweetener to taste (optional, depends on sweetness of berries)
1/2 c. olive oil
Instructions
Puree strawberries in a blender or food processor. Add remaining ingredients except olive oil and blend. Add the olive oil and blend until creamy. Taste and adjust seasonings, if necessary.
Makes 8 servings of about 2 Tbsp. each
Each serving has 1/2 gram of effective carbohydrates and approx. 123 calories

Made this last night to eat with a strawberry, blueberry, and spinach salad. It went great with it! The only comment I have is that I would add a little less vinegar and mustard and add more strawberries. It was a little to tangy in my opinion, but still tasted great!
