Balsamic Asparagus Salad

Balsamic Asparagus Salad

Makes 4 servings.

Approximate cooking and prep time: 20 minutes


  • 1 lb asparagus, ends trimmed
  • 1 Tbs red onion, minced
  • 1 Tbs Extra Virgin olive oil
  • 4 tsp balsamic vinegar
  • 1 clove garlic, minced
  • sea salt, to taste (optional)
  • freshly ground black pepper, to taste


  • Bring a medium pot of water to boil.
  • Add asparagus and boil 3 min. Drain and rinse under cold water immediately. Dry thoroughly.
  • Mix all other ingredients together.  Toss asparagus with balsamic mixture.
  • Serve chilled or at room temperature.


  1. Just made this — yum! Thought I wouldn’t like it with the asparagus chilled, but it was great with the salmon with coconut cream sauce :-)

    • shenanigans – We’re in the process of making sure all of our recipes have nutritional info right now. I updated this one to include it (if you’re logged in). It has 39 calories, 2 grams of carbs, 4 grams of fat, and 1 gram of protein.

  3. I can get balsalmic vinegar at any store right?

    I mistakenly bought olive oil instead of EVOO. Is that okay to use?

    Samantha- Evoo is extra virgin olive oil. It just has a lighter, more mild flavor than regular olive oil. But using regular olive oil is just fine.
