Ingredients
- 1 Tbs coconut oil
- 1/2 yellow onion, thinly sliced
- 2 cloves garlic, minced
- 2 (6"-8") zucchini, cut into 3" x 1/4" matchsticks
- 2 (6"-8") yellow summer squash, cut into 3" x 1/4" matchsticks
- 1 (6oz) tomato sauce
Instructions
- In large skillet, heat coconut oil over medium-high heat. When hot, add onion and cook 3-4 minutes until onion is tender and translucent.
- Add zucchini, summer squash and garlic, and cook until almost tender (5-6 minutes).
- Stir in tomato sauce and cook until heated through.

I make a very similar recipe with the addition on 1-2 tsp fresh thyme and 1-2 bay leaves, similar to a ratatouille. Let it simmer with the herbs, and it’s delish!

Pretty much impossible to find squash in Australia. What can we replace it with?

Swalk93 – You can pretty much replace it with any veggie you love. Onions, peppers, or mushrooms would all be good.
