Makes breakfast for two.

These are fairly low in protein, so we recommend adding some protein (bacon, sausage, chicken) to this breakfast.
Approximate cooking time: 25 minutes
Ingredients
- 2 bananas
- 2 egg
- 1 Tbs coconut flour
- 1-2 Tbs almond butter
- fresh or frozen blueberries
- 1/4 cup nuts of choice (walnuts, macadamia, almonds are good), chopped
- 1 tsp. coconut oil
- Dash of sea salt (optional)
Instructions
- Mash bananas in a bowl.
- Add the eggs, coconut flour, almond butter, blueberries, and nuts and salt, and whisk until well blended.
- Heat a large non-stick skillet over medium heat along with a small pat of coconut oil.
- Pour small discs of batter onto the hot pan (around 3-4" around). They'll be easier to flip if you keep them from the edges of the pan.
- Flip when batter loses its "tackiness" around the edges.
- Cook other side slowly over medium heat until fully cooked.
- Reapply oil to the pan after each round of pancakes.

I was really excited to make this recipe, but when I finally got around to trying it, it wasn’t very good. It is difficult to flip the pancakes because the mixture is very runny and it is overpoweringly banana-flavoured. I love bananas, but this was a little too much. It was almost like eating banana paste. :( A little disappointing.

Ingredients:
•1 cup almond meal
•2 eggs
•1/4 cup water (for puffier pancakes, you can use sparkling water)
•2 T coconut oil
•1/4 teaspoon salt
•1/2 banana mashed
1/2 tsp baking soda
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won’t “bubble” on top the same way as regular pancakes. Flip them when the underside is brown.

I am so sorry this recipe was not to your expectations! I have not had a problem with the batter being too runny, in fact when we make them, the batter is pretty thick. I think it’s because I use a heaping tablespoon of almond butter and will add a little bit more to get the consistency just right. Also, because of the banana intensity, I added the blueberries and walnuts to help disperse the flavor. At any rate, sometimes there are recipes that just don’t work for all of us, and that’s OK…I for one cannot make a good “paleo pizza” crust to save my life!

I put the blueberries is a pot with a little bit of water (2 T) let it boil until berries burst. Let cool and you now have syrup. It tasted great with the banana pancakes.

I tried this about a week ago and LOVE it, I’ve made them several times with equally good results. I actually only do one banana with an egg and a tablespoon of peanut butter and spinkle what nuts or berries I have. I usually eat breakfast aorund 6:30 and by 10:00 my stomach is growling, but these actually keep me full unitl lunch and sometimes beyond. Thanks Erin!

Awesome news! Just remember that peanut butter isn’t paleo – they’re legumes and usually tainted with aflatoxin (a neurotoxin), too. Try almond butter, or at the very least, aflatoxin-free peanut butter.

I tried this recipe this morning despite the negative remarks. I’m new to paleo and wanted to try something simple for breakfast that I could eat and also my kids could enjoy. They turned out fine. My kids want to have them again, so we are going to try a pumpkin version tomorrow. I don’t know why so many people had a hard time with them. They must be doing something wrong. I did slice the blueberries, instead of adding them whole, but I don’t think that should have made much of a difference.Thanks for the recipe!

Holy smokes these are yummy! The only thing that I do differently is I mix the blueberries in with the batter initially, so when it cooks, the berries “pop” which adds a stronger blueberry flavor. LOVE this breakfast dish!

We added some coconut oil to the recipe as it does make it much easier to flip and they cook more thoroughly. However, use it sparingly, and re-apply between pancakes.

@meliaustin – It’s up to you whether you want to use real maple syrup, but that’s the only kind of maple syrup I’d use. Your no calorie, no sugar, no carb product is surely not natural in any way. It probably has a ton of synthetic sugars, preservatives, colorings, etc. in it. Opt for natural over manmade and for sweeteners go with raw honey, maple syrup (grade B) or coconut sap.

I couldn’t help but notice that the alternative pancake recipe that was given looks a lot like many gluten-free recipes.
I bake gluten-free and it really is a great way to go for the paleo diet. If you are interested, check out “Blackbird Bakery Cookbook,” by Karen Morgan. She has finessed guten-free baking and I find that I can use her guten free flour combos to substitute for regular flour in my own favorite recipes. As with anything, sometimes a little tweeking needs to be done, so enjoy the process and take notes afterwards! Thanks for this site!

We are currently making the pancakes and we are having quite a problem with them. They will not flip over without crumbling or falling apart. We then added some pancake batter and now they won’t cook through. We turned down the temperature, added more oil, added less oil. Not sure what we are doing wrong. But, I don’t think we’ll be trying these again. They also take quite a long time to cook, (I made them about 3 inches wide with 2 of them in a pan).
On a different note, we did try the omelette muffins yesterday and they were a hit!! (kids even ate them!). I think we’ll stick with those!

I was pretty excited to make these last night. The mixture was pretty thick and when I attempted to pour the batter in the pan, it didn’t really make the traditional pancake circle. It was hard to flip the pancakes, but in the end they tasted pretty good. My initial reaction to the batter consistency was to mash up the bananas first then put everything in a blender to make the batter smooth. I will see how that works out next time. But overall, tasted great, especially along side some natural turkey sausage and some honey. :)

Such a yummy recipe! I substituted vegan chocolate chips for blueberries. Yes, the batter is a little weird to deal with since it doesn’t stick together like a traditional pancake batter, but the flavor is excellent!

As wonderful as the recipe looked I decided to try JJbowers recipe becaue alot of people said his were amazing. They were a delight! I also added a bit off cinamon and nutmeg. And made my own almondd meal by gringing up almonds in a food processor. This was my first time cooking a paleo meal that was more than a salad or grilled meat, I wi efinitey be trying more of these recipes. I also tried bberondass idea of putting blueberries on the stove with some water and boiling ffor a while (also used strawberries) to make syrup. So good! I love this website! One of fmy biggest problems with trying to stay on the paleo diet is craving thngs like bread pancakes etc so this is a huge help.

I’ve made banana panckes before. mash the banana, add 2 eggs, mix, add 1/2 tsp baking powder and mix again. the baking powder helps bind the mixture. Add a drop of cinnamin on top. Hope this helped.

These pancakes are amazing! I used one banana like a lot of people recommended and I also used crunchy almond butter so I didn’t need to add the walnuts. They were so easy to make and really kept me full! Love them :0)

Best pancake I have ever made. I did it a tiny different though. I used one banana, one big Tbs of Almond butter, and one egg and mashed the heck out of it, almost whipping it. Cooked on medium heat with coconut oil then sprinkled with cinnamon. Yum!

I tried these this morning – i cut the recipe in half for myself. They were delicious! My blueberries were frozen, so I popped them in the microwave for 20 seconds to unthaw them, and strained out the juice. They came out great! It was a little wierd to flip them, and I won’t cook them as long on my stove top (they got a little burnt, but still delicious!) Also, the batter is a little wierd to work with….you don’t think it will flip right, but it does! Thank you for sharing!

I’ve been making these for a while. It helps if you cook them on low heat and use fairly fresh bananas. If you use an electric skillet, 250 degrees is ideal.

We made these today using raspberries in place of the blueberries. It was what I had on hand. I have a an electric skillet and cooked them about 340F. They came out great! Both my husband & I loved them. The recipe made about 6 pancakes and they were thick and cooked up great!

I eat a version of these almost every morning. I am addicted to them. I call them pancakes but to others I say crepes because they are thin. 1 mashed banana, dash of cinnamon, dash of vanilla, mix, add 2 eggs and mix. Put some coconut oil in the pan and heat. Pour batter in pan. top with a sprinkle of walnuts or macadamia nuts. Makes 6 palm size “pancakes”. My son likes them because it reminds him of Banana Bread.

We’ve been making these for a while now and love them. At first I did everything in a bowl mixing with a fork, and had lots of trouble turning them, so then I tried putting it all in the blender and it worked perfectly. I use the blueberries as syrup though instead of in the batter. The only trick I know for turning them is to use a nonstick pan and let them cook a little longer than you think you should and then they turn pretty well.

I followed the recipe as outlined. I used a non-stick pan with a little coconut oil. The taste was great, but like a previous person stated, I could not flip the pancakes without them following apart. I eventually did a scramble to make sure they were cooked and it was good. Would like to know what I may be doing wrong so that they come out looking like a pancake

OH MY WORD BIRD!!!!!! I just made these and I am not sharing with anyone in my house. only thing I changed was I used almond flour 1/4 cup, instead of chopped nuts. No problem flipping. I used my griddle.The pancakes turned out perfect with a little bit of local honey on top. YUMMO. Thank you so much. I am going to freeze some for those busy mornings.

Delicious! But heavy -I coukd only eat 2 at one sitting. Instead of adding blueberries into the pancake mix, I blended the blueberries in a food processor and used them as the syrup.

Wow … I have to comment. I didn’t put the nuts or blueberries in …forgot about the almond butter which I was going to replace with coconut oil … and it was still excellent. I tested this a few days ago before making it for the husband. I found it very sweet and banana-like but as far as texture it was great …so I bought bananas today that were not ripe and therefore not as sweet as those I had, Excellent. I really had missed not having pancakes every so often now being paleo … my husband said he could not even taste the banana, and really could not tell they were not made from flour. Next time blueberry syrup. Yes!

Kindly advise of egg free recipes. My daughter and I are sensitive to gluten, allergic to :egg, fish, shellfish, peanut. I will give this a try w/o the eggs and will advise. I don’t think xhantam gum or egg substitute work that great.

I have been paleo for 2 weeks now and I was pretty convinced before this recipe, but now it’s official. I’m never going back. I never ate this well before! I just made these as a treat, because I’ve been quite strict and avoiding fruit, but found i needed something sweet. and they were so delicious. I made half the recipe as I was just cooking for me and found it a bit too much food, but I couldn’t stop eating them. :) I left the blueberries out of the mix and cooked them as a syrup. So yummy.
