Fresh Tomatoes with Basil

This summertime favorite can be used as a side for two adults, or double the recipe to use as a base for a great salad with greens and grilled chicken.  Use heirloom tomatoes when in season for added flavor.

Approximate cooking time: 10 minutes

Ingredients

  • 1 large package of cherry or grape tomatoes
  • handful of fresh basil
  • olive oil
  • balsamic vinegar
  • sea salt

Instructions

  1. Slice the cherry tomatoes in half and put in a bowl.
  2. Finely chop the fresh basil and add to bowl.
  3. Drizzle with balsamic vinegar and olive oil.
  4. Add sea salt to taste.

  1. If you had some sliced leeks into this–they taste amazing!

  2. Not bad! I’m not a huge tomatoe fan, but LOVE basil, so this was a pleasent surprise! Glad I tried it!! Yum!
