Smoked Salmon Scrambled Eggs

Makes breakfast for two.

Approximate cooking time: 15 minutes

Ingredients

  • 1 tsp coconut oil, bacon grease, lard, or tallow
  • 4 eggs
  • 1 Tbs water
  • 4 oz smoked salmon, sliced or broken into small pieces
  • 1/2 avocado
  • freshly ground black pepper, to taste
  • 4 chives, minced (or use 1 green onion, thinly sliced)

Instructions

  1. Heat a medium skillet over medium heat. Add coconut oil to pan when hot.
  2. Meanwhile, crack eggs into a small bowl. Add water and scramble with a fork.
  3. Add eggs to the hot skillet, along with smoked salmon. Stirring continuously, cook eggs until soft and fluffy.
  4. Remove from heat. Top with black pepper, avocado, and chives to serve.

    Adding some capers and dill takes this already yummy breakfast to a whole different level!

    is this smoked salmon already cooked? like purchase it in a can? or buy it raw and pre-cook it?

    • eleigh80 – You can buy smoked salmon in most grocery stores, as well as in places like Cosco, etc. I’m sure it could be found in a can, but I usually buy it in a plastic bag, sort of like pre-packaged deli slices comes in.

    I agree–add the capers and dill! I always add dill to eggs and to salmon!

  4. What do I do? None of the breakfast options really seem that great before a workout. Seems like they’d come back up quickly.

  5. Very delicious breakfast! I’ve neverr had smoked salmon before and didn’t realize it was salty. My husband added a little salt to the eggs and boy this dish was too salty. The avocado helped balance the flavor.
