Makes breakfast for two.
Approximate cooking time: 15 minutes
Ingredients
- 2 Tbs coconut oil
- 2 small fennel bulbs, diced
- 4 oz smoked salmon
- 2 sprigs fresh dill
- Freshly ground black pepper, to taste
Instructions
- Heat a medium sauté pan over medium-high heat. Add coconut oil when pan is hot.
- Add fennel and sauté until slightly tender (about 10 minutes)
- Add smoked salmon to heat through.
- Season with black pepper and top with fresh dill to serve.

My 1-yr-old loved this dish!
A bit expensive for the output (I got a large fennel bulb for $3, fresh dill for $2, and cubed smoked salmon for about $5) but quite delicious.

This was my first venture into using fennel.
Got to say this dish was delicious. It took a bit to find a clean smoked salmon but I did manage to find one.
I used the virgin coconut oil so the added “coconut” flavor really made this whole dish pop.
I have to say though that there is no way 1/2 of this would work for me as a meal. I ended up eating the whole thing. It wasn’t a huge dish.
I didn’t have and dill, but I did cut up some of the fronds from the fennel and sprinkled on top.
It went together SUPER quick and is a nice alternate to an egg scramble and a lot quicker.

Is there something other than salmon I could use with this…not a salmon fan
