This is an awesome success story from a reader and member of our meal plan subscription service. I love success stories – enjoy!
My name is Ella and I’m 52 years old. I’ve been Paleo for about 1 month, and in that month I have gone from daily heartburn, frequent abdominal issues, and taking Prilosec once (or twice) each day to not taking Prilosec at all, no GERD, and no abdominal issues. I can hardly believe it. I began with low carb and moved into Paleo.
I have eliminated all grains, dairy (except Ghee and natural greek yogurt), processed foods, and sugar.
I’ve never been a huge fan of green beans, but I have now embraced roasted green beans. It’s a joke within my family that the Paleo diet helped me make friends with green vegetables, as you can see from the picture above ;) I spend Sundays cooking, but that small investment is worth feeling so much better.
I have found the following websites most useful: Paleo Plan, Chris Kresser, NomNom Paleo, The Paleo Mom, and The Clothes Make the Girl.
Best print resources: Quick Start Guide & Paleo Challenge (Paleo Plan), Your Personal Paleo Code (Chris Kresser), Quick Start Guide (Paleo Mom), Paleo Magazine
Meal plans — Paleo Plan — this has been invaluable in starting out. It really helped me think about how to plan menus for such different eating. I appreciated the suggestions around dedicating a day to cooking and the ability to plan to have enough leftovers from dinner for the next day’s lunch. The shopping guide within the QuickStart Guide was exactly what I needed to clean out the old habits and start with new ones. After doing this for a month I feel like I can begin to manage my own meal planning and shopping. I’m not just saying this because you’re asking, but this was the one tool that helped to make sure that I would be successful on this journey. When I got overwhelmed I just returned to the weekly menu for reassurance and easier planning.

I have more energy and vitality than I have in quite some time. I’m not even tempted by my old diet or old standby snacks. I have a lot to learn AND I’m excited to be on this lifelong journey.
