Primavera always evokes feelings of fresh and healthy, but in reality, the dish is usually a lot of starchy pasta with a few veggies thrown in.
This version is heavy on vegetables, has some shredded chicken for protein and gets its flavor from olive oil, lemon, and lots of garlic. It’s filling, delicious, and unlike the pasta version, actually good for you. The veggies in this recipe are only a guide; feel free to use whatever you want. Pea pods and asparagus work especially well for spring.
