I recently became a huge ceviche fan. I had no idea I was missing out on the delicate and refreshing flavors of ceviche until I ordered a raw salmon ceviche dish at this Asian fusion restaurant in Vegas. So we decided we needed to create this new Mango and Calamari Ceviche recipe to celebrate my newfound love :)
If you are a fan of the fried calamari you get off the appetizer menu of your favorite restaurant, you’ll love this fresh twist that is totally Paleo friendly. It’s easy to prepare, and has a sweet and spicy flavor that is perfect for the tender squid.
If you don’t want to clean the squid yourself, your butcher or fish monger will clean it for you if you ask. If you aren’t a fan of squid, you can substitute shrimp or scallops with no problem.
