When it comes to seafood, shrimp is a great choice. It cooks pretty fast, and you can eat it in a variety of ways. If you’re looking for something a bit different, however, scallops are a great option. Just as quick cooking and versatile, they are delicious when you’re looking for something a bit more upscale, yet still easy to cook.
The key to cooking scallops is to not overcook them. If you do, they’ll become tough, rubbery, and generally unappealing. Serve these with your favorite vegetables, a salad, or maybe some cauliflower rice for a delicious and easy Paleo meal that will soon be on your favorites list.
