Slightly charred and flavorful veggies go perfectly with a nice piece of seared halibut in this recipe. The key to doing the fish right is to allow your filets to come to room temperature, and get your pan good and hot before you add the oil. It may smoke a little bit, but your fish will be nice and browned and it shouldn’t stick at all. A cast iron skillet works best, but a good stainless steel skillet will work as well. This method works with salmon or any type of meaty fish filet.

When paired with the balsamic roasted vegetables, it becomes a well-rounded, satisfying meal that won’t break your diet.
