Paleo Chopped Sardine Salad (It Sounds Gross But It’s Good!)

When it comes to salads, I don’t like big leaves of lettuce or long strips of peppers on my fork. It makes me feel like I’m trying to cram a tree into my mouth. Maybe my mouth is just too small for all that? I don’t know, but I much prefer chopped salads to any other kind of salad, and today I’m going to show you a delicious chopped salad involving sardines.

Paleo Chopped Sardine Salad

Can you see the yellow in there? Those are bits of the most enormous yellow squash I’ve ever seen, which came from our friend’s garden. I didn’t get a picture of it, but it was the size of this gigantic zucchini we were also given that week.

So the salad consists of the following ingredients, all chopped up into bite-sized pieces, like they should be.

  • 3 small roma garden tomatoes
  • 3/4 cup yellow squash
  • 1 stalk celery
  • 2 cups chopped romaine lettuce
  • 1/4 cup sauerkraut
  • 1 cup cabbage
  • 1/2 avocado
  • 1 can of sardines
  • 1 Tbs olive oil
  • dash of balsamic vinegar
  • dash of lime juice
  • squeeze of mustard
  • salt as desired

How You Make It

The amounts above are what I would use myself. But remember that you have your own preferences for certain vegetables, and everyone needs a different amount of food, so just be playful, use the veggies you have on hand, and make it how you want it.

If you really, really don’t like sardines, you can use a can of tuna, a can of chicken, or any meat or fish you have. However, I highly encourage you to try the sardines, even if you think you’re not going to like them. They’re SO full of good omegas!

Just chop everything up and throw it in a bowl, then toss it around to mix everything up, and enjoy!
