Coffee-Rubbed NY Strip Steak with Berry Sauce & Parsnip Mash

Ingredients
Steak
- 1 pound(s) beef - flank, sirloin, or NY strip steak(s)
- 1 tablespoon(s) ghee
Coffee Rub
- 1 tablespoon(s) coconut sugar
- 1/2 tablespoon(s) coffee grounds
- 1/2 teaspoon(s) garlic powder
- 1/2 teaspoon(s) paprika
- 1/2 teaspoon(s) sea salt
- 1/2 teaspoon(s) black pepper
Berry Sauce
- 1 cup(s) raspberries, fresh
- 1 teaspoon(s) lemon juice
- 1 teaspoon(s) maple syrup or honey
Parsnip Mash
- 3 large parsnip(s) cubed
- 1 cup(s) water
- 2 tablespoon(s) ghee
- 1 tablespoon(s) coconut milk, full fat or almond milk
- 1/8 teaspoon(s) sea salt to taste, preferably pink sea salt
- 1/8 teaspoon(s) black pepper to taste
- 1/8 teaspoon(s) cinnamon optional
- 2 tablespoon(s) ghee optional, to garnish when serving
Instructions
- Preheat oven to 400.
- In a bowl, combine coffee rub and press into steaks. Set aside.
- In a skillet, heat ghee and sear steak(s) for 4-5 minutes on each side.
- Remove and transfer to a baking dish to finish steaks in the oven (6 minutes for medium).
- While steak is in the oven, prepare berry sauce by combining all ingredients into your high speed blender and blend until smooth. Set aside.
- In a pot, boil cubed parsnips with water.
- Once soft, use a potato masher and mash parsnips.
- Transfer to your blander and add in additional ingredients. Blend until desired texture.
- Add salt and pepper to taste and serve with additional ghee if desired.
