Ingredients

  • 1 piece(s) chicken breast(s), boneless skinless (4-6 oz) cooked and cut into cubes
  • 1 medium sweet potato(es) cooked
  • 1 cup(s) spinach or lettuce
  • 1 medium carrot(s) shredded or chopped
  • 2 medium cabbage leaves chopped or shredded
  • 1/2 cup(s) peas
  • 1/4 cup(s) olives, green or black
  • 2 tablespoon(s) pumpkin seeds
  • 2 tablespoon(s) olive oil to taste
  • 1 tablespoon(s) balsamic vinegar to taste

Instructions

  1. Add spinach to a big bowl.
  2. Top with all the remaining ingredients.
  3. You can add each ingredient in a pile, then eat it as it is or stir everything together.
  4. Or you can simply add all ingredients into a big bowl and dig in.
