Ingredients
- 2 tablespoon(s) avocado oil
- 10 small potato(es) red or yellow
- 1 pound(s) asparagus trimmed
- 1/8 teaspoon(s) sea salt to taste
- 1/8 teaspoon(s) black pepper to taste
- 1/8 teaspoon(s) garlic powder to taste
- 2 pieces chicken thighs boneless, skinless
Instructions
- In a large skillet, warm avocado oil over medium-high heat.
- Sauté potatoes until brown, about 10 minutes, stirring often. Cover and reduce heat to medium, allowing to cook for an additional 5-7 minutes, until potatoes are softened.
- Remove lid and add asparagus, spices, and chicken, increasing heat to medium-high. Cook for 4-5 minutes, or until asparagus deepens in color and begins to soften. Turn asparagus and chicken frequently to allow for even heating.
- Serve warm. Optional: garnish with diced green onion or chopped bacon.
- Note: The chicken in this recipe is easily replaced with a fried egg, if preferred.
