Ingredients

  • 3 tablespoon(s) avocado oil
  • 1 large sweet potato(es) chopped
  • 2 cup(s) brussels sprouts trimmed and halved
  • 1/8 teaspoon(s) sea salt to taste
  • 1/8 teaspoon(s) black pepper to taste
  • 1/8 teaspoon(s) garlic powder to taste
  • 3 piece(s) chicken thighs, (6 oz) slow-cooked

Instructions

  1. In a large skillet, on medium-high heat, add avocado oil. Sauté potatoes and Brussels sprouts for 7-10 minutes, until starting to brown and soften. Stir frequently.
  2. Reduce heat to medium. Add spices and pre-cooked chicken and turn a few times to ensure even heating, for about 5-7 minutes. Continue to stir.
  3. Remove from heat and serve hot.
  4. Note: Any protein can be used here, or you can cook the chicken fresh. Batch cooked chicken is used as a breakfast time saver.
