Ingredients

Crockpot Chicken

  • 1/2 pound(s) chicken breasts, boneless, skinless
  • 1/2 pound(s) chicken thighs, boneless, skinless
  • 1/2 small onion(s) diced
  • 3 medium garlic clove(s) minced
  • 1 can(s) pineapple, crushed (8-oz) not drained
  • 1/4 cup(s) coconut aminos
  • 1 medium lime(s) juiced
  • 1/2 teaspoon(s) ginger, ground
  • 1/4 teaspoon(s) red pepper flakes
  • 1/4 teaspoon(s) sea salt
  • 1/4 teaspoon(s) black pepper

Wraps

  • 1 bunch(s) chard
  • 1 medium avocado(s)
  • 2 medium carrot(s) shredded
  • 1/4 head(s) cabbage(s), green shredded
  • 2 medium bell pepper(s), green finely chopped
  • 1/4 cup(s) cilantro, fresh finely chopped

Instructions

  1. Place chicken, onions and garlic in a crock pot.
  2. In a small bowl, combine pineapple, coconut aminos, lime juice, ground ginger, red pepper flakes, salt and pepper. Stir to mix, and then add to crock pot.
  3. Cook on low for 4-6 hours. Remove chicken from crock pot and shred with two forks.
  4. Return chicken to crock pot, stir to mix all ingredients, and set temperature to warm (or low) until ready to serve.
  5. Assemble Swiss chard wraps with desired ingredients.
