Ingredients
Crockpot Chicken
- 1/2 pound(s) chicken breasts, boneless, skinless
- 1/2 pound(s) chicken thighs, boneless, skinless
- 1/2 small onion(s) diced
- 3 medium garlic clove(s) minced
- 1 can(s) pineapple, crushed (8-oz) not drained
- 1/4 cup(s) coconut aminos
- 1 medium lime(s) juiced
- 1/2 teaspoon(s) ginger, ground
- 1/4 teaspoon(s) red pepper flakes
- 1/4 teaspoon(s) sea salt
- 1/4 teaspoon(s) black pepper
Wraps
- 1 bunch(s) chard
- 1 medium avocado(s)
- 2 medium carrot(s) shredded
- 1/4 head(s) cabbage(s), green shredded
- 2 medium bell pepper(s), green finely chopped
- 1/4 cup(s) cilantro, fresh finely chopped
Instructions
- Place chicken, onions and garlic in a crock pot.
- In a small bowl, combine pineapple, coconut aminos, lime juice, ground ginger, red pepper flakes, salt and pepper. Stir to mix, and then add to crock pot.
- Cook on low for 4-6 hours. Remove chicken from crock pot and shred with two forks.
- Return chicken to crock pot, stir to mix all ingredients, and set temperature to warm (or low) until ready to serve.
- Assemble Swiss chard wraps with desired ingredients.
