Ingredients

  • 1 piece(s) chicken, whole (2.5-3 lbs) cut up
  • 1 can(s) pineapple, crushed (8-oz) with juice
  • 1 large orange(s) juiced
  • 1/2 cup(s) raisins
  • 1/2 cup(s) almonds sliced
  • 1/4 teaspoon(s) cinnamon
  • 1/4 teaspoon(s) cloves, ground
  • 1/4 teaspoon(s) black pepper freshly ground, to taste
  • 3 medium peach(es) sliced and pureed ; fresh, frozen, or canned (if using canned, rinse and drain well)

Instructions

  1. In a large skillet, combine chicken, pineapple, orange juice, raisins, almonds, cinnamon, and cloves.
  2. Simmer partly covered for 45 minutes, turning chicken occasionally.
  3. Add peach puree to pan and stir.
  4. Simmer uncovered 15 minutes longer, until chicken is tender and sauce is slightly thickened.
  5. Season with freshly ground black pepper to taste.

    1. This is one chicken that is three pounds. You should chop it up, but it doesn’t have to be pre-cooked. But you can substitute three pounds of chicken breast and that should work fine.

  2. I made this tonight due to having to switch up some meals. I also had to sub boneless pork chops for the chicken breasts. This definitely makes up quite a lot of food, so there’s definitely enough for leftovers. This recipe bursts with some amazing flavors and textures, and is definitely amazing.

  4. Wow, I was really surprised by how good this dish was. I must admit-I hesitated at all of the fruit with the meat. But WOW. I used skinless turkey breasts due to the higher protein content. Next time, I will leave the breasts whole and toss the whole mess in the clay pot. It should just fall apart. I am also thinking that I will remove the liquid before serving and heat it in a pot on the stove with some tapioca powder in order to make a nice gravy. Yum!

  5. I made this last night and boy was it amazing!!! I would suggest boneless chicken to make it easier to eat but it totally was yummy! When my son got home late and had some he said that it reminded him of my Thanksgiving recipe.The syrup has almost the same ingredients but no chicken. It has sweet potato slices alternated with apple slices and the syrup is poured over and the whole thing gets baked in the oven for about 1.50 hours.Anyway its my family’s favorite for the holidays! Thanks for this delish dish!!!!

  6. I made this last night for a friend who is doing a paleo challenge and it was amazing! I used chicken breast instead of a whole chicken and crasins instead of rasins. I served it over sweet potatoes and had enough leftovers for lunch for 2 days. I’ll definitely make it again!

  8. WOW!!!! My husband and I have recently started the paleo challenge because of our crossfit class. At first I thought eating like this would be hard but not at all. I’ve used this site to make a different recipe every night and tonight I made this recipe. Freaking amazing! I did add a small amount of Thai peppers because we like spicy food. Favorite one yet.

  10. For reference, I browned and seared the skin (skin side down) before simmering with the other ingredients and thought the chicken came out even one step better then what I already thought was a GREAT recipe!

  11. I would not use cut up the chicken next time. I ended up with sort of a soupy mess. I think it would be better just to use the whole chicken breast and spoon the desired amount of sauce over it.

      Applesauce or pureed pears both sound like delicious alternatives! Pureed nectarine or apricot would probably work well also. Can’t wait to hear how it turns out!

  12. Delicious! Was baking a batch of almond muffins while the chicken was cooking. The family decided to add the chicken and sauce over the muffin. WOW!
