“Perpetual spinach” is a leafy green vegetable that belongs to the same plant family as chard, but tastes and looks more like spinach. Because it can be difficult to find at the grocery store, this Perpetual Spinach Salad recipe calls for chard and spinach instead, which are a delicious substitution. Ingredients

  • 1 bunch(es) chard chopped
  • 2 cup(s) spinach chopped
  • 3 medium carrot(s) shredded
  • 1/4 head(s) cabbage(s), red shredded (optional)
  • 1/4 medium onion(s), red thinly sliced - can also use shallots (optional)
  • 1/2 cup(s) pumpkin seeds, raw
  • 2 tablespoon(s) lemon juice

Instructions

  1. In a blender, prepare the Spicy Herb Dressing or your salad dressing of choice.
  2. Toast Pumpkin Seeds: In oven (or toaster oven), toast raw pumpkin seeds at 350 F until lightly browned and crispy, tossing occasionally, for about 5-10 minutes. Keep a watchful eye during toasting, as they can burn quickly! Set aside to cool.
  3. Prepare Salad: In a large bowl, toss together chard, spinach, carrots, cabbage, onion and lemon juice.
  4. Add your salad dressing of choice and toss until thoroughly combined.
  5. Serve into salad bowls and sprinkle with toasted pumpkin seeds.
  6. Note: Leftovers will taste best if the salad, pumpkin seeds and dressing are all stored separately until ready to serve.
