Rainbow Slaw

Ingredients

  • 1/2 head(s) cabbage(s), red sliced thinly
  • 1/2 head(s) cabbage(s), green sliced thinly
  • 1 head(s) broccoli cut into florets
  • 1 large carrot(s) shaved or sliced thinly
  • 1/3 head(s) cauliflower chopped
  • 1 large apple(s), sweet diced
  • 4 medium onion(s), green diced
  • 2 medium lemon(s) juiced
  • 2 tablespoon(s) Paleo mayonnaise
  • 1/8 teaspoon(s) sea salt to taste
  • 1 tablespoon(s) water or more to thin dressing

Instructions

  1. In a large bowl, combine all vegetables and apple.
  2. In a small bowl, whisk together lemon juice, mayo, and sea salt. Add water if needed.
  3. Pour dressing over slaw and stir together. Store in the fridge for up to 3 days.
