Broccolini with Hazelnuts

The tender stalks and florets of broccolini are milder and often sweeter than typical broccoli, which makes it a more delicate option for this colorful, tasty vegetable side. Compared to the more popular form of broccoli, broccolini is just as easy to steam, sauté or roast, making it a great way to branch out into cooking new vegetables. While it is often sweetest in the spring, it can be found year round at many grocery stores. If you have trouble finding broccolini, feel free to substitute broccoli florets.

Broccolini with Hazelnuts

Ingredients

  • 1 tablespoon(s) olive oil or coconut oil (or use bacon drippings)
  • 1/3 cup(s) hazelnuts roughly chopped
  • 1 medium garlic clove(s) minced or sliced thin
  • 1 pound(s) broccolini trimmed(or use broccoli florets, if you cannot find broccolini)

Instructions

  1. Heat a large sauté pan over medium heat. Add oil.
  2. When pan is hot, add hazelnuts and brown, stirring constantly to be sure they do not burn (about 4-5 minutes).
  3. As soon as a toasty, nutty aroma comes from the hazelnuts, remove from pan and set aside.
  4. Return the sauté pan to medium heat and add the garlic and broccolini to the pan. Toss to coat with remaining oil in pan. Cover and steam for 5-6 minutes, or until bright green and slightly tender.
  5. Remove from pan, top with hazelnuts and serve immediately.
