These Halloweiners are sure to be a hit at Halloween with the little kids and the big kids as well! This little mummies recipe is made from all natural lil’ smokie cocktail weiners wrapped in almond-flour ‘bandages’. The perfect bite-size spooky snacks for your Halloween gathering…your friends won’t even realize that they’re grain- and dairy-free, and low carb to boot! This recipe is based off of my Paleo Pigs in a Blanket recipe, which is equally as tasty but a little bit easier to make if you’re strapped for time. Halloweiners or Lil Mummies
Total Time: 50 minutes
Cook Time: 50 minutes
- 1 package(s) cocktail wieners, uncured, fully-cooked, nitrate-free, smoked (about 25 weiners for 6 servings)
- 11/2 cup(s) almond flour
- 1/4 teaspoon(s) sea salt
- 1/4 teaspoon(s) baking soda
- 1 large egg(s)
- 1 tablespoon(s) coconut oil melted
- 3 tablespoon(s) mustard, dijon to make the eyes and for dipping
- Preheat oven to 350 F.
- Combine the dry ingredients (almond flour, sea salt, baking soda) in a medium size bowl.
- In a separate small bowl, whip together the egg and melted coconut with a fork.
- Pour the wet ingredients into the dry ingredients and mix together to form a dough.
- Form dough into a ball, place on a cutting board, and cover with a piece of parchment paper cut to the size of the baking sheet you will be using.
- Roll out the dough using a rolling pin (or something cylindrical), until you have a flat thin sheet approximately 1/8 inch thick.
- Cut thin strips approximately 1/4 inch wide to make the mummy's bandages.
- Pat your cocktail wieners dry.
- Carefully wrap the cocktail wieners in the "bandages", forming the dough firmly around the sausages to achieve a mummy-like appearance.
- Place the same sheet of parchment paper on a baking sheet and then place the wrapped lil' mummies onto the baking sheet.
- Bake at 350 F for 20 to 30 minutes, until dough is cooked through and lightly browned.
- Let the lil' mummies cool and then apply their eyes using a toothpick dipped in dijon mustard.
- Serve with additional dijon mustard. Enjoy!
