Bob's Red Mill Gluten Free White Rice Flour, 24 Ounce
The refined version of brown rice flour, white rice flour can be used interchangeably with brown rice flour. The second largest world crop, rice is a staple food in Asia where, unlike most grains, it is grown on small paddies and harvested by hand, just as it has been for centuries.
Our white rice flour is stone ground from premium California white rice. It is lighter, milder and easier to digest than wheat flour. Some people find white rice flour to be slightly gritty, but many find it preferable to bean flours.

Note: This flour is grainy.
Before putting shaped sourdough bread loaves in their banneton baskets for the final proofing, I first line the baskets with a white cloth napkin and cast a good amount of rice flour to line the napkin . I put in the loaf and cast more rice flour on top of the loaf and fold the napkin's corners over the top to cover. Then when proofing is done, I use the napkin as a sling to lift the loaf out of the basket and roll the loaf into my hot cast iron dutch oven or ceramic loaf bread baker.
