Zucchini and Squash Sauté

1 tablespoon(s) coconut oil
1/2 medium onion(s), yellow, thinly sliced
2 medium garlic clove(s), minced
2 medium zucchini, cut into 3 inch x 1/4 inch matchsticks
2 medium summer squash(s), yellow, cut into 3 inch x 1/4 inch matchsticks
1 can(s) tomato sauce (6 oz)


  1. In large skillet, heat coconut oil over medium-high heat. When hot, add onion and cook 3-4 minutes until onion is tender and translucent.
  2. Add zucchini, summer squash and garlic, and cook until almost tender (5-6 minutes).
  3. Stir in tomato sauce and cook until heated through.

    I make a very similar recipe with the addition on 1-2 tsp fresh thyme and 1-2 bay leaves, similar to a ratatouille. Let it simmer with the herbs, and it’s delish!

    Pretty much impossible to find squash in Australia. What can we replace it with?

      Swalk93 – You can pretty much replace it with any veggie you love. Onions, peppers, or mushrooms would all be good.

      Dinorah Carr – Feel free to skip the tomato sauce! It is just an added flavor, so you can just do sauteed zucchini and squash without the extra sauce and it will be delicious.
