Zucchini and Squash Sauté

1 tablespoon(s) coconut oil
1/2 medium onion(s), yellow, thinly sliced
2 medium garlic clove(s), minced
2 medium zucchini, cut into 3 inch x 1/4 inch matchsticks
2 medium summer squash(s), yellow, cut into 3 inch x 1/4 inch matchsticks
1 can(s) tomato sauce (6 oz)


  1. In large skillet, heat coconut oil over medium-high heat. When hot, add onion and cook 3-4 minutes until onion is tender and translucent.
  2. Add zucchini, summer squash and garlic, and cook until almost tender (5-6 minutes).
  3. Stir in tomato sauce and cook until heated through.


  1. I make a very similar recipe with the addition on 1-2 tsp fresh thyme and 1-2 bay leaves, similar to a ratatouille. Let it simmer with the herbs, and it’s delish!

  2. I was skeptical at first…but oh my! Delicious!

  3. Pretty much impossible to find squash in Australia. What can we replace it with?

    • Swalk93 – You can pretty much replace it with any veggie you love. Onions, peppers, or mushrooms would all be good.
