Carrot Goji Salad

Ingredients

  • 1 large carrot(s)
  • 2 teaspoon(s) goji berries
  • 1 teaspoon(s) pumpkin seeds, toasted
  • 1/2 tablespoon(s) hemp seeds
  • 1 medium lime(s)
  • 1/8 teaspoon(s) sea salt to taste

Instructions

  1. Grate the carrot with a hand grater or grater blade in a food processor.
  2. Add the grated carrot to a bowl along with the pumpkin, hemp seeds and goji berries.
  3. Stir together and season with sea salt and lime juice.
  4. Serve with preferred main dish.
