Ingredients
- 1 tablespoon(s) coconut oil
- 1 medium apple(s), tart peeled and diced
- 1/4 medium onion(s) diced
- 2 medium garlic clove(s) minced
- 1/8 teaspoon(s) sea salt to taste
- 1/8 teaspoon(s) black pepper to taste
- 1 teaspoon(s) poultry seasoning
- 1/2 teaspoon(s) rosemary, dried
- 1/2 teaspoon(s) thyme, dried
- 1/2 teaspoon(s) fennel seed
- 1/8 teaspoon(s) nutmeg, ground
- 1 pound(s) chicken breasts, boneless, skinless
- 1 large egg(s)
- 1/2 teaspoon(s) sea salt to taste
- 2 tablespoon(s) coconut oil for cooking
Instructions
- In a medium-sized pan or skillet, heat the coconut oil and add the apple, onion, garlic, half of salt, pepper, poultry seasoning, dried rosemary, dried thyme, and fennel seeds. Cook over medium heat, stirring often, until apple and onion are tender.
- Meanwhile, place the chicken in a food processor and blend until ground.
- Add the egg, chicken and onion mixture to the food processor, along with rest of salt and process until mixed.
- Heat up a bit more coconut oil in the skillet over medium heat. Add a few large scoops of the chicken mixture (roughly the size of a golf ball) and press them down with a spoon to flatten into patties.
- Cook for about 4 minutes per side, or until golden brown and cooked through.
- Repeat with remaining chicken mixture.
