Ingredients
- 2 tablespoon(s) avocado oil
- 1 small onion(s) diced
- 1 pound(s) beef, ground
- 1/4 teaspoon(s) sea salt
- 1/8 teaspoon(s) black pepper
- 1/2 teaspoon(s) cumin
- 1/2 teaspoon(s) garlic powder
- 1/2 teaspoon(s) onion powder
- 1/2 teaspoon(s) oregano, dried
- 1/2 cup(s) water optional
- 1/2 head(s) cabbage(s), green
- 3 cup(s) greens, mixed
- 3 cup(s) arugula
- 2 medium avocado(s) peeled and chopped
Instructions
- In a large skillet over medium heat, sauté avocado oil and onion until onion browns, about 3-5 minutes.
- Add ground beef and spices, cooking until beef is done, about 7-9 minutes. Add water if you want bit of “sauce” for dressing.
- In two bowls, add ¼ portion each of cabbage, greens, and arugula.
- Mash the avocado in a small bowl, adding salt and pepper to taste, if desired.
- Place the taco meat and mashed avocado in the bowl with the greens, and serve immediately. Reserve leftovers for a later meal.
