Ingredients

For the chicken

  • 4 piece(s) chicken breast(s), boneless skinless (4-6 oz) diced into one-inch pieces
  • 1/8 teaspoon(s) sea salt to taste
  • 1/8 teaspoon(s) black pepper to taste

For the Sauce

  • 1 tablespoon(s) arrowroot powder
  • 1 tablespoon(s) coconut sugar
  • 1 tablespoon(s) honey, raw
  • 2 tablespoon(s) water
  • 3 tablespoon(s) white wine vinegar
  • 1/4 cup(s) coconut aminos
  • 1/2 teaspoon(s) ginger, ground
  • 1 medium garlic clove(s) minced
  • 1/2 teaspoon(s) red pepper flakes
  • 2 tablespoon(s) sesame seeds, toasted

Instructions

  1. Chop chicken into 1-inch pieces, then salt and pepper each side. Set aside.
  2. In a medium-sized bowl, whisk together ingredients for the sauce. Be sure to break down any clumps.
  3. Place chopped chicken in the bowl and coat with sauce.
  4. Transfer sauce and chicken to the crockpot.
  5. Set crockpot to low. Cook 3-4 hours until chicken is juicy and tender.
  6. Serve immediately.
