Ingredients

  • 6 piece(s) chicken thighs, (6 oz) cooked and chopped
  • 8 slice(s) bacon cooked and diced
  • 3 small apple(s) diced
  • 4 medium onion(s), green diced (optional)
  • 2/3 cup(s) Paleo mayonnaise
  • 1 medium lemon(s) juiced
  • 1/8 teaspoon(s) sea salt to taste
  • 1/8 teaspoon(s) black pepper to taste
  • 1/8 teaspoon(s) garlic powder to taste
  • 1/8 teaspoon(s) onion powder to taste
  • 4 cup(s) spinach or greens, for serving

Instructions

  1. In a large mixing bowl, combine chicken, bacon, apples, and onions (optional).
  2. In a small mixing bowl, whisk mayonnaise, lemon juice, and spices together. Pour sauce over chicken mixture and stir well. (More mayonnaise may be needed depending on how saucy you prefer your chicken salad.)
  3. Place on a bed of greens, and serve immediately. Chicken salad will keep in the fridge for up to 3 days.
