Bananas with Almond Butter and Coconut

An extremely simple snack recipe that is open to endless variations, this combination is filling and very tasty. If you’d like you can add cinnamon or other spices, substitute shredded coconut for the coconut milk, or blend the ingredients into a smoothie. Freezing the banana ahead of time and then blending will give the mixture the texture of ice cream.

  • 2 tablespoon(s) coconut milk, full fat


  1. Slice banana and divide into small bowls.
  2. Top each banana half with half of the almond butter and coconut milk.


  1. Is this really coconut milk, or just coconut? I really can’t imagine it with coconut milk, but I can totally picture a banana spread with almond butter and rolled in shredded coconut. That’s something my kids might actually eat.

  2. I wasn’t sure either, so I took the almond butter and coconut milk (I used light) and warmed it quickly in the microwave. Then I added the sliced banana to it, stirred, and it was very good!

  4. I misread the ingredients (or was probably thinking of part of another recipe) when I put this together this morning and used shredded coconut instead of coconut milk. It was super yummy! Made for a good breakfast

  5. great simple recipe! made this for the first time today but turned it into a drink. in a blender, used 1 banana, 2 tbs of almond butter, a “pinch” of raw agave nectar, and eye-balled the coconut milk until i got the consistency i like. ended up with an 8oz drink. delicious morning to-go blended breakfast!

  6. Made this quick and dirty. Sounded questionable but it was so tasty! Just poured coconut milk over the top and ate it like a bowl of cereal. Not the prettiest but really quite good.

  7. It reminded me of being little and my mom would cut up a banana, sprinkle some sugar over the top and pour on milk. It was a wonderful snack.

  8. We freeze the banana, pop the ingredience in a blender and you have what looks and tastes like icecream!
    Excellent snack or treat! My son loves it!

  9. Is this serving for 2? Why separate in 2 bowls?
    If it is it seems like 1/2 banana, 1 tablespoon of almond butter and 1 of coconut milk is a small snack????

  10. This was an awesome breakfast! i added some cinnamon, nutmeg, and shredded coconut. And I ate both servings all by myself!

    1. Ryoder – It depends. Do you mean the coconut milk “drink” in the carton that’s the same consistency as almond milk or rice milk? Or do you mean the concentrated coconut milk in a box that’s the size of a bar of soap? If it’s the latter, then it’s fine but you’ll have to add water to it as the directions say. But if it’s the carton then take a look at those ingredients and decide if you want to be consuming them and know that the nutritional info on this recipe will change as that’s really just VERY watery coconut milk.

    1. Kelly – Yes, it is coconut, so it tastes like actual coconut. But the coconut flavorings they put in candies and other foods are far different from actual coconut flavor, so don’t be afraid to at least give this really useful food a try.

  11. I also added 1tbsp of in sweetened coconut flakes, a sprinkle of unsweetened cocoa and cinnamon I also used crunchy almond butter. So yummy

  12. Do we use the canned coconut milk or the coconut milk that is in the refridgerator, I think it’s like Pure or Silk or something like that?

  13. I mashed my banana, stirred in the almond butter & coconut milk, added shredded coconut and cinnamon. I call it pudding too. It is so good! It really helps my sweet tooth!

  14. Love these. Actually stacked 2 banana slices with almond butter in the middle and poked a toothpick through them. Drizzled coconut milk on them and underneath them. Sprinkled unsweetened coconut on bottom of plate as well to keep them from sticking. Easier to pick up. Made for a pot luck with friends.

  15. We used to make this into popsicles when we were kids. Stick a popsicle stick (a chopstick will do just as well) into the peeled banana lengthwise, spread the almond butter all over the banana, them roll it in shredded coconut (sweetened or unsweetened is up to you – we use unsweetened – the banana is sweet enough). Then put it in the freezer (on a plate is fine) for about 30 minutes and voila – you have some SERIOUSLY yummy popsicles. If you want to make them the day before I recommend wrapping them in plastic wrap or putting them in a Ziploc bag so they don’t start tasting like freezer burn. Enjoy!

  17. Having trouble finding canned coconut milk vs carton coconut milk. Would it be located in a different area of a store or next to other milk products??

  18. This is my new favorite breakfast. I use almond milk and then sprinkle unsweetened coconut flakes on top.

      Yes you are correct, bananas (and all fruits) are made from mostly carbohydrates. Bananas, as you mentioned, are particularly rich in their carb content, so if you are following a lower-carb version of Paleo, you might want to skip this recipe! :)
