Endive Salmon Poppers

Makes a snack or side for two. This recipe also makes an excellent appetizer.

Instructions

  • Wash and separate endive leaves.
  • Top with smoked salmon, red onion and avocado.
  • Sprinkle with sea salt and freshly ground black pepper to taste, and drizzle with olive oil.

    Is the smoked salmon really salty? Where could I get said salmon?

      It is salty, so you don’t want to eat it all that often. You can get smoked salmon at Whole Foods or other health food stores.

    I added cucumber and aioli. The aioli helped balance out the bitterness of the endive, in my opinion.

      Nita – The salmon is smoked, so no, you don’t cook it further.
