Endive Salmon Poppers


This recipe also makes an excellent appetizer.

1 head(s) endive
4 ounce(s) salmon, smoked
1/2 medium onion(s), red, minced
1/2 medium avocado(s), sliced
1/4 teaspoon(s) sea salt, (optional)
1/8 teaspoon(s) black pepper, freshly ground
1 tablespoon(s) olive oil


  1. Wash and separate endive leaves.
  2. Top with smoked salmon, red onion and avocado.
  3. Sprinkle with sea salt and freshly ground black pepper to taste, and drizzle with olive oil.

    Is the smoked salmon really salty? Where could I get said salmon?

      It is salty, so you don’t want to eat it all that often. You can get smoked salmon at Whole Foods or other health food stores.

    I added cucumber and aioli. The aioli helped balance out the bitterness of the endive, in my opinion.

      Nita – The salmon is smoked, so no, you don’t cook it further.

    This was so easy and amazing. I really felt like I was going out on a limb (especially with the onions) but I am so glad I did. It was perfect. Thanks! ..I actually used only about one slice of a red onion finely diced and that was plenty. Much more may have been overwhelming.
