Makes a snack or side for two. This recipe also makes an excellent appetizer.

Ingredients
- 1-2 heads endive
- 4 oz smoked salmon
- 1/2 red onion, minced
- 1/2 avocado, sliced
- sea salt (optional)
- freshly ground black pepper
- olive oil
Instructions
- Wash and separate endive leaves.
- Top with smoked salmon, red onion and avocado.
- Sprinkle with sea salt and freshly ground black pepper to taste, and drizzle with olive oil.

Is the smoked salmon really salty? Where could I get said salmon?

It is salty, so you don’t want to eat it all that often. You can get smoked salmon at Whole Foods or other health food stores.

I added cucumber and aioli. The aioli helped balance out the bitterness of the endive, in my opinion.
