Bananas with Almond Butter and Coconut

Makes a small but filling snack for two.

Approximate preparation time (no cooking involved): 5 minutes

Ingredients

  • 1 large banana
  • 2 Tbs almond butter
  • 2 Tbs coconut milk

Instructions

  1. Slice banana and divide between two small bowls.
  2. Top each banana half with half of the almond butter and coconut milk.

Add slivered almonds, cinnamon, and/or shredded coconut for a tasty variation!

  2. Is this really coconut milk, or just coconut? I really can’t imagine it with coconut milk, but I can totally picture a banana spread with almond butter and rolled in shredded coconut. That’s something my kids might actually eat.

  3. I made this today for breakfast. It was a nice flavorful combination.

  4. I wasn’t sure either, so I took the almond butter and coconut milk (I used light) and warmed it quickly in the microwave. Then I added the sliced banana to it, stirred, and it was very good!

  5. This was so yummy. I think next time I’m going to put it all in a blender, then in the freezer for an ice cream like treat.

  6. I misread the ingredients (or was probably thinking of part of another recipe) when I put this together this morning and used shredded coconut instead of coconut milk. It was super yummy! Made for a good breakfast

  8. great simple recipe! made this for the first time today but turned it into a drink. in a blender, used 1 banana, 2 tbs of almond butter, a “pinch” of raw agave nectar, and eye-balled the coconut milk until i got the consistency i like. ended up with an 8oz drink. delicious morning to-go blended breakfast!

  10. Made this quick and dirty. Sounded questionable but it was so tasty! Just poured coconut milk over the top and ate it like a bowl of cereal. Not the prettiest but really quite good.

  11. It reminded me of being little and my mom would cut up a banana, sprinkle some sugar over the top and pour on milk. It was a wonderful snack.

  12. A good pre-workout snack. Zapped it in the microwave for 20 sec. to melt the almond butter a little…yummy!

  13. We freeze the banana, pop the ingredience in a blender and you have what looks and tastes like icecream!
    Excellent snack or treat! My son loves it!

  14. Is this serving for 2? Why separate in 2 bowls?
    If it is it seems like 1/2 banana, 1 tablespoon of almond butter and 1 of coconut milk is a small snack????
    Help???

    • Jenn – Yes, as it says in the recipe, it makes a “small but filling snack for 2″. It’s 188 calories per person.

    This was an awesome breakfast! i added some cinnamon, nutmeg, and shredded coconut. And I ate both servings all by myself!

  16. I bought coconut milk in a box instead of a can bc I couldnt find it in a can. Is this ok or should I not use it?

    • Ryoder – It depends. Do you mean the coconut milk “drink” in the carton that’s the same consistency as almond milk or rice milk? Or do you mean the concentrated coconut milk in a box that’s the size of a bar of soap? If it’s the latter, then it’s fine but you’ll have to add water to it as the directions say. But if it’s the carton then take a look at those ingredients and decide if you want to be consuming them and know that the nutritional info on this recipe will change as that’s really just VERY watery coconut milk.

      Kelly – Yes, it is coconut, so it tastes like actual coconut. But the coconut flavorings they put in candies and other foods are far different from actual coconut flavor, so don’t be afraid to at least give this really useful food a try.

    I also added 1tbsp of in sweetened coconut flakes, a sprinkle of unsweetened cocoa and cinnamon I also used crunchy almond butter. So yummy

  23. Do we use the canned coconut milk or the coconut milk that is in the refridgerator, I think it’s like Pure or Silk or something like that?
