Herb Crusted Beef and Offal Meatballs with Braised Greens

Organ meats, or offal, are an excellent source of nutrients, but they have a strong flavor that takes some getting used to. The easiest way to make them a regular part of your diet is to mix them with ingredients that you love, such as these Paleo offal meatballs. This meatball recipe is made with a combination of ground beef and beef liver, and then crusted in dried herbs before being baked under high heat. They’re then served with hearty, bacon-braised greens that make for a comforting, healthy, and filling meal. Feel free to use any type of organ meat you like; just ask your butcher to grind it for you.
